1 ½ cupswhole wheat pastry flour

½ cupunsweetened cocoa powder
Dutch-process or natural

1 tspbaking powder

½ tspbaking soda

¼ tspsalt

⅔ cupbrown sugar
packed

2eggs
large, room temperature

2 Tbspunsalted butter
melted and slightly cooled

2 Tbspavocado oil
or neutral oil

1 cupplain Greek yogurt
2% or whole milk for best texture

½ cupmilk
low-fat dairy or unsweetened plant-based

1 tsppure vanilla extract

2 oz70% dark chocolate
melted and cooled, optional but recommended
Instructions
Step 1
Preheat the oven to 350°F (175°C). Lightly grease and line an 8x8-inch square baking pan or 8–9-inch round pan with parchment paper.
Step 2
In a large bowl, whisk the whole wheat pastry flour, cocoa powder, baking powder, baking soda, and salt until well combined and lump-free.
Step 3
In a separate bowl, whisk the brown sugar and eggs until well combined. Whisk in the melted butter, oil, Greek yogurt, milk, and vanilla. If using melted dark chocolate, whisk it in now.
Step 4
Pour the wet mixture into the dry ingredients. Gently fold until just combined—don’t overmix. The batter will be thick but spoonable. If it seems too thick, add a tablespoon or two of extra milk.
Step 5
Pour batter into the prepared pan and smooth the top. Bake for 25–35 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs. Begin checking at 25 minutes to avoid overbaking.
Step 6
Let the cake cool in the pan for about 10 minutes before carefully transferring it to a wire rack to finish cooling. Slice and serve as is, or dust lightly with powdered sugar.
