Instructions
Step 1

Head 3 of 4 of milk to 86° Fahrenheit while stirring. Add sugar, setting aside 0.3 oz.
Step 2

Heat to 122°, slowly whisk in salep with rest of sugar to keep it from clumping
Step 3

Grind a piece of frozen mastic the size of a fingernail and a pinch of sugar. Add to mix

Add rest of milk. Boil 15 minutes stirring, beat with restaurant-quality mixer or by hand 15 to 30 minutes, or until room temperature
Step 5

Pour into metal bowl and place inside another larger bowl with dry ice with regular ice and salt.
Step 6

Freeze overnight, then return mixture to double-bowl set-up with dry-ice, and salt
Step 7

Knead with utensils until it reaches desired consistency as it begins to melt
