Instructions

Prep

Step 1
Preheat oven to 400°F. Prepare pan(s) with parchment paper.
Step 2
Spoon flour into a measuring cup and sift with salt.

Making the Cookies

Step 3
Cream together 1/2 lb butter, 1/2 cup powdered sugar & vanilla until smooth. Use the cookie paddles on the Bosch.
Step 4
Using the paddles, gradually mix in flour and salt. Once incorporated, add almond meal/flour and orange zest. Mix until well blended. The dough will stick slightly to the spatula but not to fingertips. If very sticky, add 1-2 tbsp more flour.
Step 5
Shape dough into 1" balls using a small scoop. Place 1" apart, about 24 to a half sheet. The balls should not expand or flatten much. Yield should be about 40 cookies.
Step 6
Bake 11-13 minutes until bottoms are golden and edges are barely golden.
Step 7
Place the cookie sheet on a wire rack five minutes to cool.
Step 8
Fill a bowl with powdered sugar and roll the cookies in it while they are still warm (not hot). Place coated cookies on a wire rack to cool completely.
Step 9
Once cookies are at room temperature, dust the tops with a mini sieve for a snowy look. Lightly shake off the excess sugar and store in a tin.
