Healthy delicious vegan cookies

Delicious and healthy. Gluten free if you leave out the flour or use a gluten free alternative. 😉 These are actually healthy and packed with wonderful minerals, protein, and vitamins. I added some chocolate because it seemed too healthy. 😅 You can leave out the chocolate and even change or leave out the spices if you like. You have to use salt though. Also the nuts are optional and you can use ones you like too. Serves approx. 24 European sized cookies or 15 American sized. Please enjoy!

Add the oatmeal, baking powder, flour, desiccated coconut, chocolate and the pecan nuts. I like the later to stay in chunks. If you'd like them smaller, add them before or mix longer.

Make cookies the size you like but about 1,5 cm thick on a baking sheet. Leave some room in between. Put into the oven and bake until the edges are golden brown. You'll start to smell them a little.
Big cookies take about 20 minutes, European size cookies take about 15 minutes. Keep an Eye on them.

Take the cookies out of the oven, take them off of the baking sheet and leave the cookies to cool for a while. Straight from the oven they're still too delicate and will fall apart.
