Instructions

Step 1
In a jug, combine water, milk and half the sugar Stir until sugar dissolves.
Step 2
Sift flour and salt into a large bowl, then add sultanas and yeast Mix well Make a well in the centre and gradually add liquid and combine to make a soft, sticky dough Turn dough out onto a lightly floured surface Knead until dough is smooth and elastic.
Step 3
Place dough in a large, oiled bowl. Set aside, covered, until doubled in size - about 1 hour
Step 4
Using your fist, knock down dough to remove air. Shape into a log 35cm in length. Set aside covered, until doubled in size - about 30 minutes
Step 5
Preheat oven to 200°C Bake for 30 minutes until golden and hollow when tapped on the base.
Step 6
ICING. In a small bowl, combine icing sugar, butter, hot water and food colouring until smooth Spread over cooled bun, then sprinkle with coconut.
