Instructions

Step 1
Heat the oven to 400 degrees. Trim the excess skin and fat from the chicken. Mix together the bread crumbs, garlic, parsley, and tarragon on a plate and season with salt and pepper. Spread the mustard lightly on the chicken, covering completely. Carefully coat the chicken with the bread crumb mixture.
Step 2
Gently place the chicken in a roasting pan. Bake until cooked through, 30 to 40 minutes.
