Instructions
Step 1
Gently steam butternut until just cooked, drain and return to pot.
Step 2
Gently fry leeks and thyme in a little butter but don't brown them, keep them soft and tender
Step 3
Mash together the butternut, leeks, garlic and mascarpone.
Step 4
Stir through the bacon and season with salt and pepper
