Instructions

Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

In a mixing bowl, beat 1 cup unsalted butter and 1 cup sugar on medium speed until light and fluffy (2-3 minutes).

Mix in 1 large egg, 1 1/2 teaspoons vanilla extract, and 1/2 teaspoon almond extract (optional).

In a medium bowl, whisk together 2 cups powdered sugar, 2-3 tablespoons milk, and 1/2 teaspoon vanilla extract until smooth. Adjust milk as needed for consistency.

Spread or pipe the icing on cooled cookies. Let them set for 30-60 minutes before serving.
