Step 1
Preheat oven to 375 degrees F. Beat softened butter and sugars til fluffy. Add the eggs, one at a time, mixing after each addition. Scrape down the sides of the bowl, add vanilla and mix.
Step 2
In a separate bowl, whisk together the flour, baking soda and salt. Add to the bowl of the mixer. Scrape down the sides and mix again. Dough should be stiff. Add up to six mix-ins (about half cup of each). To make the cookies exactly as pictured use: 1/2 cup mini-chocolate chips, 1 cup crushed Lay's Potato Chips, 1/2 cup of oatmeal and 1/2 cup of toffee bits.
Step 3
Mix just until incorporated. Scrape the bowl down once more (don't forget the bottom) before baking. Scoop using a medium-sized scoop onto cookie sheets. I used silicon baking mats. Ungreased baking trays or parchment -lined cookie sheets will also work.
Step 4
Bake for 1o minutes or until golden brown and done in the middle.
Step 5
Let cool on the baking sheets for about 5 minutes, then cool completely on a cooling rack.
