Green Onion and Havarti Egg Bites

This is a quick egg bites recipe using the Joie silicone microwavable egg bites mold.

Instructions
Step 1
Crack 2 large eggs into 2 cup measuring cup, or bowl.
Step 2
Add a splash of milk to the eggs
Step 3
Season with salt and pepper
Step 4
Whisk together using a fork or small whisk, until the egg mixture is a smooth yellow without any clear stringy whites
Step 5
Finely chop 1 fresh green onion, then add to the egg mixture and whisk until mixed.
Step 6
Dice 1 slice of havarti cheese into very small cubes, or use shredded, and set aside.
Step 7

Pour egg mixture evenly into each of the 4 cups of the microwavable egg bites tray, filling them to halfway.
Step 8
Once each cup is filled halfway, sprinkle in the cheese evenly. Doing this here will prevent the cheese from clumping at the bottom of each cup before cook time.
Step 9
Close the lid of the egg bites maker, ensuring it has a flush close all around.
Step 10
Microwave egg bites tray for 2 1/2 - 3 1/2 minutes.
Step 11
Remove, serve, and enjoy.

Optional: for a creamier and fluffier egg bites texture, place 1 cup of water on top of the closed silicone mold when it is placed in the microwave, Then proceed to microwave for 3 minutes, but open the tray to check for a shiny or jiggly center. The water acts as a steam bath, so cook time may vary depending on what fillings you choose. For this recipe, I found that 3 to 3 1/2 minutes is the ticket!
