Chicken and Dumplings

Instructions

Step 1
Basil Dumpling Mix: 2 cups of bisquick or biscuit mix and 1 tsp basil leaves in a bowl. Add 2/3 cups of coconut milk and stir until dough forms.
Step 2
1) Heat butter in large skillet. Add chicken and brown it on (low-medium) on all sides. Remove chicken from skillet and place in large oven proof pan (like a turkey pan). Preheat oven to 350 degrees.
Step 3
Add onions, celery, celery leaves and garlic to fat left in skillet you cooked the chicken in. Cook until tender. Sprinkle with flour and mix well. Add chicken broth or bullion mix, sugar, salt, pepper, basil, bay leaves, and parsley; bring to boil. Can put in frig to cool or let set and then stir in peas.
Step 4
3) Put chicken in a big roasting pan and pour sauce over chicken and cook at 350 degrees for 40 minutes (covered).
Step 5
4) 15-20 mins before the timer in step 3 is done prepare the dumplings.
Step 6
After 40 mins and step 3 is complete, remove pan from the oven and turn up the oven to 425 degrees. Drop dumplings into the sauce.
Step 7
Return to oven and cook UNCOVERED 10 mins. After 10 mins of cooking remove the pan and COVER with lid and let it cool for 10 mins.
Step 8
If you double the batch, remember to double your sauce & double your dumpling mix. If you want to save time & not do the basil dumpling use can biscuits to tear & drop.
