Instructions

Step 1
Brown ground beef in a pan and set aside.
Step 2
In the same pan, add the chopped onions, carrots, celery, and garlic and cook until translucent. About 5 mintues.

Add flour, tomato paste, and cook down.

Add red wine, bring to a boil, and reduce by half.

Add beef stock, worcestershire sauce, thyme and bay leaf. Add back the beef and reduce to a saucy consistency.

Turn off the heat and incorporate miso.

Mash

Step 7
Boil potatoes until fork tender and pass through a ricer.

Incorporate cream, butter, nutmeg, salt, and pepper.

Assembly

Step 9
In a 9" pan, add the beef mince. Then layer on the mash and use a fork to make some ridges. Grate on some parmesan and bake at 400 F for 25 minutes or until the top has browned nicely. Garnish with chopped parsley.
