Baked Lemon Chicken

Easy Baked Lemon Chicken that is super healthy, creates the best sauce from the juices! Mom gave me this recipe - and I just like to add more lemon zest than the recipe calls for. I also use fresh oregano and thyme instead of dried and am very generous with how much I put in. I also just throw in an extra splash of wine if I feel like it. The more juice the better so don’t be a stickler and follow the recipe to a tee. I already increased the lemon zest tho.

Instructions

Preheat oven to 400°F.
Step 2
2. Prepare the sauce. Gently heat the olive oil in a small saucepan over low heat. Ad minced garlic and heat until tender but not browned, about 1 minute.

3. Remove from heat, add the wine, lemon zest and lemon juice, oregano, thyme, pepper and stir.
Step 4
4. Pour into a 9 x 13 inch baking dish.
Step 5
Rub the chicken in olive oil then add to the baking dish with sliced lemons, spoon the sauce over the chicken. Cover the chicken in garlic salt.
Step 6
Place in oven at 400 for 40 mins. If the skins aren’t getting golden brown and crispy during the last 5-10 mins, pop open the over door and raise heat to 450.
Step 7
Cover sweet potatoes in olive oil and garlic salt and then bake with chicken
Step 8
Keep an eye on potatoes so they don’t burn. When chicken is done, spoon the sauce over the meat before serving. Take extra sauce and put in bowl for everyone to dip their sweet potatoes in.
Step 9
Don’t forget to serve the sliced lemons. They’re incredible
