Step 1
Season the pork loin with salt and pepper. Sear in a pan on all sides until browned.
Step 2
In a bowl, mix finely chopped herbs with Panko, parmesan and olive oil.
Step 3
Brush the pork loin with mustard and top with the Panko herbs mixture.
Step 4
Then bake in the oven at 350F for about 20 min, until the internal temperature is around 135 F.
