Instructions
Step 1
Put milk in a large pot at medium/high heat and stir frequently so the bottom doesn’t burn
Step 2
Cut and squeeze your lemons and put the juice aside
Step 3
Once the milk starts to boil immediately take off the burner
Step 4
Slowly stir and gradually add in your lemon juice. The milk should start to curdle into white chunks and leave behind whey (The yellow liquid). Let it sit for 10 mins
Step 5
Pour the mix into a strainer with some cheesecloth. You can save the whey (great in pancakes/waffles and soups) or discard it. The more whey you keep in your ricotta mix the looser it will be

Put the ricotta into a container and stir in your salt
