Step 1
1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. In a large bowl, whisk together flour, baking powder, baking soda, sugar, and salt.

3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

4. Pour in the buttermilk and gently stir until the dough comes together. Be careful not to overmix.

5. Turn the dough out onto a lightly floured surface. Pat it into a 1-inch-thick rectangle and fold it over itself 2-3 times to create flaky layers.

6. Roll or pat the dough to about 1-inch thickness. Use a round cutter (or a glass) to cut out biscuits. Gather scraps and repeat until all the dough is used.

7. Place biscuits on the baking sheet, close together for soft sides or spaced apart for crispier edges. Brush the tops with a little buttermilk.

8. Bake for 12-15 minutes, or until golden brown.
