Instructions
Step 1
Cut chicken in short stripes. Not the long way.
Step 2
Pound out short strips. Salt & Pepper to taste. Coat one side with butter (not melted)
Step 3
In separate bowl mix together chopped parsley, mozzarella, grated carrot and greek yogurt.





Step 4
Place filling on the filets. Roll filets with the filling in it.
Step 5
Place rolls in parchment prepared baking tray.
Step 6
Bake 350 degrees for 30 minutes.
Step 7
Remove from oven sprinkle with mozzarella bake additional 10 minutes.
Step 8
Serve.
