Instructions

Step 1
Mix all brine ingredients together
Step 2
Strain brine after 5 hours and submerge chicken in brine for 4 hours in refrigerator
Step 3
Heat smoker to 275 degrees
Step 4
Tenderize chicken by poking holes in it with fork or tenderizer
Step 5
Add chicken to brine and refrigerate for 4 hours
Step 6
Dry chicken with paper towel
Step 7
Generously apply chicken rub to chicken after brining.
Step 8
Place chicken on beer can chicken holder
Step 9
Smoke chicken at 275 degrees for 3.5-4 hours until chicken reaches internal temp of 165-170 degrees
Step 10
Remove spine and cut chicken in half
