8 ouncessalmon fillet
skin on

8 ouncescream cheese
or cottage cheese

1 ½ tablespoonsfresh lemon juice
plus more as needed

½ teaspoonpaprika

1 pinchcayenne pepper

kosher salt

6 tablespoonsshallots
minced

3 ouncessmoked salmon
Nova Scotia style, finely chopped, optional

¼ cupfresh chives
minced

Crostini
or thinly sliced baguette, for serving

Instructions
Step 1
Fill a wide pot with 3 inches of water, and set steamer basket into the pot (the water should not touch the steamer). Cover and bring to a boil.

Step 2
Add the salmon fillet, skin-side down. Cover and steam over high heat until just slightly translucent at the center, 6 to 9 minutes, depending on its thickness. The salmon will finish cooking as it cools.


Step 3
Transfer the salmon to a plate and set aside to cool to room temperature. When ready to handle, remove and discard the skin and break the flesh into large flakes.


Step 4
In a food processor, combine the cream cheese, lemon juice, paprika, and cayenne pepper. Season with salt and black pepper.







Step 5
Process until smooth, stopping to scrape down the sides of the work bowl, using a flexible spatula as necessary.

Step 6
Add about half the steamed salmon and process until well combined, again stopping to scrape down the sides of the work bowl as necessary.


Step 7
Scrape the mixture into a medium bowl, add the remaining steamed salmon, the shallots, smoked salmon, and chives. Using the spatula, food the mixture until well combined.





Step 8
Adjust the seasoning with additional lemon juice, salt, and pepper, of necessary. Cover and refrigerate to let the flavors blend, about 30 minutes.



Step 9
When ready to serve, let test at room temperature before a few minutes ago it loses its chill, then pass crostini and capers alongside.
