Instructions
Step 1
Preheat oven to 375°F (190°C). Brush mushrooms with olive oil and place them on a baking sheet.
Step 2
In a skillet, heat olive oil and sauté garlic for 1 minute. Add quinoa, rosemary, paprika, salt, and pepper. Stir well.
Step 3
Stuff the mushrooms with the quinoa mixture and top with feta cheese if using.
Step 4
Bake for 20 minutes until mushrooms are tender. Serve warm.
