Chocolate Ganache Mixture
Instructions
Step 1
Prepare chocolate cake according to directions.
Step 2
For chocolate ganache. In a saute pan, combine the sugar, water and strong coffee over medium-high heat and bring to a boil, stirring occasionally until the sugar is dissolved.
Step 3
Continue cooking without stirring until the mixture is the consistency of syrup, about five minutes longer.
Step 4
Set aside to cool to room temperature.
Step 5
For the chocolate mouse. In a saute pan, combine the chocolate and heavy cream over medium heat until the chocolate begins to melt and the cream is almost simmering.
Step 6
Whisk until the chocolate and cream are smooth.
Stir in the vanilla and powdered sugar.
Remove from the heat and place the pan in the bowl of ice water.
Step 7
Mix with a hand mixer on high until the mixture is creamy smooth and softly holds its shape. Chill 2 hrs
Step 8
To assemble, smooth chocolate mousse on top of the cake. With the ganache, frost the top of the cake over the mouse layer. Add shaved or chopped chocolate to the top of the ganache.
Step 9
Serve with whipped cream and chocolate syrup drizzle.
