Instructions

Step 1
Preheat the oven to 350°F and prepare a large baking dish.
Step 2
Cut zucchini lengthwise and then chop into triangles. Add to the dish.

Peel and add 3 cloves of garlic to the dish.

Add oil, salt and pepper to the dish. Stir to coat.

Bake for 30-45 mins.

For the cashew cream

Step 6
Add 1 clove of garlic, lemon, nutritional yeast water and cashews to a blender. Blend until smooth.

Combine

Step 7
Squish the zucchini and garlic with a fork.
Step 8
Add cashew cream, Italian seasoning and beans. Stir until combined. Top with breadcrumbs.
Step 9
Bake for 5 mins.
