My version of Aran’s One Bowl Peach & Olive Oil Cake

Ingredients

115mlwater
room temp

115mlextra-virgin olive oil
plus extra for

150gbrown rice flour
or 180g GF plain flour & leave the starch out

30gtapioca starch
or 180g GF plain flour & leave the starch out

75gground almonds
100g if subbing some stevia

100gswerve
or 60g & stevia to taste

1 tspsalt

2 TspVanilla Extract

1lemon
finely grated zest of, optional, can use a pinch of cinnamon instead

2eggs
large, lightly beaten

1 ½ tspbaking powder

½ tspbicarbonate of soda

Tin of peaches
rinsed & drained

Pistachios
chopped for top, optional
Instructions
Step 1
Heat the oven to 180C / 170C fan/gas mark 4.
Step 2
Mix all the dry ingredients together with a good pinch of salt in a bowl. Add the zest, eggs, olive oil, milk and vanilla extract, and whisk the wet ingredients into the dry ones.
Step 3
Pour the batter into the tin. Lay the peach slices on top - they will sink a little - and bake for 50 minutes. If you put a skewer into the middle of the cake it should come out clean.
