Ingredients

1 poundground beef
ground pork, or bull pork sausage

1 tablespooncornstarch

1 tablespoondried minced onion

1 teaspoonschili powder

½ teaspoongarlic salt
omit if using sausage

14.5 ouncecan tomatoes
cut up

¾ cupall-purpose flour

¾ cupcornmeal

2 teaspoonsbaking powder

2eggs
beaten

8.5 ouncecan cream-style corn

½ cupmilk

3 tablespoonsvegetable oil

1 cupshredded cheddar cheese
Instructions
Step 1
In a large skillet cook meat till brown. Drain off fat. Stir in cornstarch, onion, chili powder, and garlic salt. Stir in undrained tomatoes. Cook and stir over medium heat till thickened and bubbly. Cook and stir 2 minutes more.
Step 2
In a mixing bowl stir together flour, cornmeal, and baking powder. In another bowl combine eggs, milk, and oil. Stir egg mixture into dry mixture. Add cheese. Stir just till moisten.
Step 3
Spread half of the batter into a greased 2 quart rectangular baking dish. Spoon meat mixture atop. Top with remaining batter. Bake in oven at 375F about 30 minutes or until golden brown. Let stand for 5 minutes. To serve, cut into squares. If desired, add salsa.
