Step 1
Get the lamb ready:
Set the oven temperature to 425°F (220°C). After removing any extra fat from the lamb, liberally season it with salt and pepper.

To prepare the herb crust:
Combine the breadcrumbs, olive oil, parsley, rosemary, thyme, minced garlic, and a dash of salt and pepper in a bowl.

Heat a skillet over medium-high heat, then sear the lamb for about two minutes on each side, browning it on all sides. Press the herb mixture onto the lamb to create a crust, then brush the lamb's top with Dijon mustard.

To cook the lamb:
To get a medium-rare internal temperature of 135°F (57°C), roast the lamb for 15 to 20 minutes on a baking sheet. For clean, accurate cuts, let it rest for ten minutes before slicing with a Damascus steel knife.

Make the Garlic Mashed Potatoes:
Boil the potatoes and garlic in salted water for 15 minutes or until they are soft while the lamb roasts. After draining, mash with heavy cream and butter. Add salt and pepper for seasoning.

Place the lamb slices on a dish and serve them with the mashed potatoes after garnishing. For a splash of colour, garnish with additional parsley.
