I used up leftover lamb and leftover roast potatoes to make this family classic

Instructions
Step 1
Finely chop the onion and fry in olive oil until softened
Step 2
Chop up leftover lamb and add to the pan with the onion. Turn up the heat and brown the meat slightly
Step 3
Add the flour and stir until all incorporated
Step 4
Pour in the stock, water and wine. Turn up the heat and cook until the sauce has reduced and thickened.
Step 5
Add in the mint and stir through
Step 6
Chop up your leftover roast potatoes and put into a bowl. Season with salt and add in the cheese
Step 7
Pour your meat mixture into an oven dish and cover with the potato cheese mix
Step 8
Into an oven at 180 for 25 mins until golden and crisp
