500glambs mince
2onions

2carrots
2stalks celery
4cloves garlic
1 Tbsptomato paste
1 cupbeef stock
2bay leaves

Instructions
Step 1
Begin with finely chopping the onions, carrots, celery and garlic.
Step 2
On a medium-high heat, add a little oil and drop in the lamb mince. Brown until it has a deep colour and crispy texture. Remove from the pan and put to the side.
Step 3
Add a slab of butter with a drizzle of olive oil to the same pan and add the onions. Sweat down for a couple of minutes and then add the carrots, celery and garlic.
Step 4
Cook down until soft (2-3 minutes) and re-add the lamb mince. Season with salt and pepper and add the tomato paste. Stir well.
Step 5
Then pour in the beef stock and throw in the bay leaves. Turn to low and leave to gently simmer.
Step 6
Meanwhile peel, slice and put your potatoes onto boil in salted water. Let them boil for roughly 15 minutes and then drain.
Step 7
In a mixing bowl add the potatoes with the butter, grated cheddar and cream. Mash until smooth and season with salt and pepper to taste.
Step 8
In a baking dish, add the mince and top with the potatoes. You can either use a piping bag like I did or simply spread evenly with a spoon and drag a fork over to make even lines.
Step 9
Place in a preheated oven at 180c/350f for 35-40 minutes until golden and crisp on top.
