Chicken and Chorizo Paella

This is a good hearty meal which will warm you up on a cold day. It is fairly easy to make and shouldn’t take too long!
I’d recommend prepping everything before you start cooking just to make it easier. And whilst it’s cooking away you can do the washing up so there’s barely anything after you eat :)

Instructions
Step 1
Heat a large saucepan with oil and cook the chicken until just cooked.
Step 2
Remove the chicken and set to side. Using the same pan cook the diced onion and red pepper until soft.
Step 3
Add the chorizo. Put the lid on and leave to simmer.
Step 4
Add the tomatoes, stock and rice. Mix thoroughly and then leave to simmer.
Step 5
Put the lid back on but make sure to stir regularly making sure it doesn’t burn. When the liquid is mostly absorbed season with salt, pepper and garlic.
Step 6
The liquid should be more or less absorbed but still moist. Then serve!
