Instructions

Step 1
Add flour and salt to large bowl, briefly stir to disperse salt. Add yeast and water and mix with the handle of a wooden spoon until the dough comes together in a shaggy ball and there is no loose flour.

Step 2
Cover and let rise until ~doubled and jiggly, about 8–10 hours. Can make this faster by adding a small amount of honey, proofing in a warm spot, and/or adding more yeast.
Step 3
Preheat oven to 450F.
Step 4
Sprinkle flour generously on a clean surface and place the dough ball on top. Add more flour across the surface of the dough ball and then cut into four equal pieces. Stretch each piece into a baguette shape.
Step 5
(NOTE) Use a steam tray for better crustiness.
Step 6
Bake until ~210F internal and/or desired color, usually ~25 minutes.
