Instructions
Step 1
Mix the water yeast and brown sugar and let sit for 5 minutes
Step 2
Add the milk and plain flour to a pan on medium heat and stir until thickened to a gloopy paste
Step 3
Add the strong bread flour and salt to a stand mixer, mix, and add the gloopy milk mixture and yeast mixture and turn on low speed and knead into a dough for 10 minutes
Step 4
Add the softened butter and let run for another 10 minutes
Step 5
Oil your hands and pull it out and form into a ball, back into the bowl, cover with cling film and leave at room temp for 2 hours or in the fridge overnight
Step 6
Pull it out and roll to a large square on a floured board
Step 7
Heat the sunflower oil for 2 minutes in a pan then pour over the N’Duja and mix to loosen it up
Step 8
Spread it out all over the dough leaving a rim around the edges
Step 9
Roll it up into a log then lay in a covered load tin in a proving drawer or hot part of the house for 1-2 hours til doubled in size
Step 10
Preheat the oven to 200C
Step 11
Add the loaf, still covered, to cook for 15 minutes, then reduce the heat to 170C and cook for 30 minutes
Step 12
Let cool then tip out and cut yourself a slice!
