Step 1
1 In a wide pan over medium high heat, brown the chorizo. Soak up a little of the excess grease with a paper towel, but leave some to cook the potatoes in.
Step 2
2 Add the potatoes, stir well into the chorizo, and cook for about 10 minutes, stirring occasionally, until the potatoes are fork tender.
Step 3
3 Turn the heat to simmer, and gently crack the eggs over the potatoes and chorizo.
Step 4
4 Salt and pepper the eggs to taste, cover, and cook until the eggs are done to your liking.
Step 5
5 Add the shredded cheese prior to cracking the eggs, or save it for garnish on top (if using).
Step 6
6 Add chives, green onions, more cheese, or anything you like!
