Instructions

Step 1
Peel the potatoes and slice them with a mandoline. Put water to boil in a kettle. Put the slices in a bowl and rinse them in cold water and drain them, until water comes out clear (should take 3 or 4 rinses).

Step 2
Leave the drained potato slices in the bowl and cover them with boiling water. Move them around regularly with a wooden spoon for 5 minutes so they partially cook. Drain the water and leave them to cool down for a few minutes.

Step 3
Mix the mozzarella and cheddar cheeses. Line a baking dish that fits in the air fryer with parchment paper. Add a layer of potatoes, spray with oil, season with salt and freshly ground toasted black pepper, add a layer of ham on top, sprinkle a layer of the cheese mix. Repeat the layers until you run out of ingredients (should give you 5 layers or so). Carefully compress the layers with your hand. Sprinkle the Parmesan and breadcrumbs on top.
