I love parfaits for breakfast-it's just an extra-special (and fancy!) way to begin the day. I also enjoy them as an afternoon snack or an after-dinner dessert. This one has a special bit of extra flair and is reminiscent of an apple crumble. P. 85

Instructions
Step 1
In a 7-inch round heatproof dish that fits inside an electric pressure cooker, combine the apples, maple syrup, and cinnamon. Cover with foil and set on a trivet.





Step 2
Pour the water into the cooker and carefully lower the trivet and dish into the cooker.


Step 3
Place the lid on the pressure cooker and make sure the vent valve is in the SEALING position. Using the display panel, select the MANUAL/PRESSURE COOK function and LOW PRESSURE. Use the +/- buttons until the display reads 2 minutes.

Step 4
When the cooker beeps, switch the vent valve from the SEALING to the VENTING position. Use caution while the steam escapes.
Step 5
In a small bowl, combine the yogurt, honey, and nutmeg. Divide half of the yogurt mixture among 4 cups. Divide half of the apples among the cups, followed by half of the granola. Repeat with remaining apples, yogurt mixture, and granola. Serve immediately.
