Instructions

Prepare the yeast mixture

In a small bowl, mix the active dry yeast, 1 tablespoon of sugar, and 100ml of warm milk. Stir lightly and let it rest for about 5 to 10 minutes until it becomes frothy.

Make the dough

In a large bowl, combine the all-purpose flour, 50g of sugar, and a pinch of salt. Add the beaten egg and the yeast mixture. Mix well until you have a smooth and uniform dough. Then, add the softened unsalted butter and knead the dough for about 8 to 10 minutes until it becomes smooth and elastic. If the dough is too sticky, you can add a little more flour, but be careful not to make it too firm.

First rising

Cover the bowl with a clean cloth or plastic wrap and let the dough rise in a warm, draft-free place for about 1 to 1.5 hours, or until it doubles in size.

Shaping the brioches

Once the dough has risen, divide it into equal pieces and shape them into balls. Next, follow your idea of braiding the balls to form braided brioches. You can refer to my TikTok tutorial for the technique! Place the braided brioches in the lightly greased round baking pan.

Second rising

Cover the baking pan with a clean cloth or plastic wrap and let it rest for another 30 minutes to 1 hour, or until the braided brioches double in size.

In a small bowl, beat the egg with 1 tablespoon of milk to make the eggwash. Gently brush the tops of the braided brioches with the eggwash using a pastry brush. Afterward, generously sprinkle chocolate chips on top of the eggwashed brioches.

Baking

Preheat your oven to 190°C (375°F). Place the baking pan in the center of the oven and bake the braided brioches for about 20 minutes, or until they turn golden brown.

Serving

Remove the brioches from the oven and let them cool slightly in the baking pan before transferring them to a serving plate. These chocolate chip braided brioches will be a delightful treat for breakfast, snack time, or any time you crave a delicious homemade treat!
