Ingredients
8 servings

500gMinced Beef
80/20 preferable

500gMinced Pork
80/20 preferable

200mlRed Wine
or Port

2carrots
large

2White Onions
or Red Onions

5 ClovesGarlic
The larger the better

2 TinsChopped Tomatoes
or Peeled Plum

1 PunnettChestnut Mushrooms
or other muchrooms

1 Tbsptomato puree

2beef stock cubes

1 Tbspcaster sugar

1 Tbspworcestershire sauce

1 ½ tspThyme
Few Sprigs
Fresh Basil, or 3tsp of dried

sea salt flakes

olive oil

2 TbspCorn Flour

water
Instructions
Prep Stage
Step 1
Finely Slice the Garlic Cloves

Step 2
Fine dice the onions (whichever type you chose)

Step 3
Remove the mushrooms stems, and slice

Step 4
If you have peeled plum Tomatoes, take them out and cut them into 8ths (If chopped tomatoes, skip this)

Step 5
Peel, square off and fine dice the carrots.

Cooking Phase
Step 6
Add Olive Oil into a frying pan on a medium high heat. Add the onion, adding salt and the sugar. Once starting to cook, add in the garlic, turn down the heat and allow to cook, tossing occasionally. Once done, set aside





Step 7
Fresh oil, allow it to heat, medium head, add mushrooms into this pan, along with the thyme and fry until cooked to your satisfaction. Season to taste while cooking. Once cooked, set aside.



Step 8
In a large pan, add some more olive oil over a medium high heat, and brown off the minced meat.

Once meat is browned, add in the carrots and stir in

After a couple of minutes, add in the tomatoes and tomato puree


Step 11
Add in the wine a few minutes afterwards, along with the mushroom mix and garlic/onion mix. Also, season it at this point.

Allow to simmer for 5 minutes, then add in the Basil (roughly chopped), the Worcestershire sauce, and both stock cubes

Put on the lid and allow to simmer. While this is happening, take the cornflour and mix it with water to make a thin paste.


Step 14
After 20 minutes of simmering, add in the cornflour mix and stir in, allowing the liquid to thicken into more of a sauce. Then leave to simmer for another 15 on very low heat.
