Apple Celery Soup

Instructions

Step 1
Melt butter in saucepan over medium heat.
Step 2
Add the chopped celery root and the apples.
Step 3
Sprinkle some salt and sautè until the celery and apple turn a little soft.
Step 4
Keep the saucepan partially covered so that the steam generated helps them cook faster.
Step 5
Stir in the remaining ingredients then add to the blender.
Step 6
Pour the soup back into the saucepan and check for salt and pepper levels. Adjust to suite your tastes.
Step 7
When you are ready to serve the soup, give the soup a quick boil and serve the apple celery soup along with toasted garlic bread.

Preparing celery root (celeriac)

You need a sharp knife to peel it because the bumpy surface makes using a peeler very hard.
Step 9
Slice the top and bottom so that you can stand it on a cutting board. Using your knife, make sure you take off all the slightly hairy brown peel.
Step 10
The inside of the root is cream colored so don’t stop peeling until all the brown peel is gone.
Step 11
Small pieces or cubes of the root are great in a winter stew or a fall soup.
