Step 1
Melt the Chocolate: Use a microwave or double boiler to melt the dark chocolate after breaking it up into little pieces. When heating in a microwave, whisk every 20 seconds until the mixture is smooth. Let it cool a little.

Egg Yolks:
The egg yolks should be prepared by whisking them in a mixing dish with half of the sugar (25g) until they are creamy and pale. Mix thoroughly after adding the vanilla extract.
Step 3
Mix Yolks and Chocolate:
Fold the melted chocolate into the egg yolk mixture gradually until it is well mixed. To keep the airiness, be gentle.
Step 4
Beat the Cream:
Beat the heavy cream in a another dish until it forms soft peaks. Put aside.
Step 5
Beat the Egg Whites:
Beat the egg whites until foamy in a separate, clean dish with a pinch of salt. Add the remaining 25g of sugar gradually while beating until stiff peaks form.
Step 6
Fold Everything Together:
Until the chocolate mixture is smooth, gently fold the whipped cream into it. Then, being careful not to deflate the mixture, fold in the beaten egg whites.
Step 7
Cool the Mousse:
Transfer the mousse into bowls or serving glasses. Refrigerate for at least two hours, or until set, after covering with plastic wrap.
Step 8
Garnish and Serve:
For a sophisticated touch, sprinkle cocoa powder or chocolate shavings on top before serving.
