Instructions
Step 1
Prep the Roast: Remove the prime rib roast from the refrigerator and allow it to come to room temperature for about 1 hour before cooking. Preheat your oven to 450°F (232°C).
Step 2
Season the Meat: In a small bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper. Rub this mixture all over the prime rib roast, ensuring it is well coated. If using, spread Dijon mustard over the top.
Step 3
Roast the Prime Rib: Place the roast in a roasting pan, bone side down. Roast in the preheated oven for 20 minutes to create a beautiful crust. Then, reduce the oven temperature to 325°F (163°C) and continue cooking for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (120°F for rare, 130°F for medium rare, 140°F for medium).
Step 4
Rest the Meat: Once cooked, remove the roast from the oven and tent it loosely with aluminum foil. Allow it to rest for 20-30 minutes, which helps the juices redistribute throughout the meat.
Step 5
Slice and Serve: After resting, slice the prime rib against the grain and serve with your favorite sides or a rich gravy.
