Instructions

Step 1
It’s best to take your steak out of the freezer or fridge and salt it. Salt all sides and leave it out , or in the fridge for an hour to let the salt penetrate. You CAN skip this step for a less tasty steak.
Step 2
After you salt your steak and let it penetrate, pat it dry with a paper towel.
Step 3
Heat your oven to 275°
Step 4
As the oven is heating up, season your steak. Generously season (more than you might expect) all sides of your steak with salt, pepper and garlic powder.
Step 5
Bake your steak for about 20 minutes. Remove the steak when it’s 5-10 degrees from your desired doneness.
Step 6
Add oil to pan and let it heat up until shimmering.
Step 7
Put your Steak in the oil. If it doesn’t sizzle as soon as it hits the oil, it’s not hot enough.
Step 8
Sear the steak in the oil for one minute on both sides. I also do the sides for about 10 seconds each

Reduce the heat, or in a second pan melt some butter.
Step 10
In the butter add crushed or minced garlic, both halves of a halved shallot, rosemary and thyme sprigs. After a few minutes add in your steak. Baste the steak with the butter and aromatics.
Step 11
After basting for a minute on each side put your steak on a plate. I like to put the butter and aromatics on top.
Step 12
Let the steak rest for 5-10 minutes cover with foil.

Move the steak to a different plate and enjoy!
