Prepare the pan: Place two 40cm (16-inch) sheets of parchment paper, crumpled up and arranged inan “X,” in a 20cm (8-inch) springform pan that is 6cm (2.5 inches) tall. Press the paper down, leting it fold over the rim to create the rustic edges. (The bater’s weight will hold the paper in place duringbaking.)

Beat the cream cheese: In a large mixing bowl, beat the cream cheese on medium speed for about 2 minutes, scraping down the sides as needed until it’s smooth and free of lumps. Add the sugar and beat on low speed for 10 seconds.
