1. Preheat the oven to 425oF. 2 • Pat the chicken thighs with a paper towel and place into a large baking dish. 3. Massage the chicken with 2 tablespoons of the olive oil and season with a couple of generous pinches of salt and pepper. 4. Top the chicken with the shallot, dill, garlic, lemon zest, mustard, pecorino, and 4 tablespoons of the lemon juice. 5. Massage all the ingredients thoroughly into the chicken. Space out the thighs so they do not overlap. 6. Pour the remaining 2 tablespoons of lemon juice over the chicken and drizzle with the remaining tablespoon of olive oil. 7. Bake for 30 minutes. Then baste the chicken with the drippings in the pan and return to the oven for an additional 10 minutes, until the chicken skin looks golden brown and the chicken is cooked through.
8. Spoon the drippings over the chicken, lemon wedges, and serve right away.
