Ingredients
6 servings

600 gramschicken sausages

2onions
diced

2peppers
any colour - diced

5carrots
medium, peeled and sliced into thick chunks

600 gramspotatoes
small, peeled and cut into big chunks

2 x 400gtins chopped tomatoes

3 Tbsptomato puree

250mlchicken stock
made up with 1 stock cube

2cloves garlic
crushed

½ tspdried oregano

1 tspdried thyme

1 handfulfresh parsley
chopped

1 x 400gtin butter beans
drained

1beef stock pot

1 Tbspworcestershire sauce

1bay leaf
Instructions
Step 1
Put all the ingredients except the sausages, butter beans and stock pot into the slow cooker. Stir well.
Step 2
Add the sausages and give another quick stir.
Step 3
Cook on High for 5 hours, or Low to Medium for 6-8 hours.
Step 4
Check to make sure all the veg is cooked through. Stir in the butter beans and stock pot. Check the seasoning and add some salt and freshly ground black pepper if needed.
Step 5
Allow to cook for another 20-30 minutes to heat up the butter beans, then serve
