Instructions
Step 1
Heat some olive oil in a pan and add your diced onion and green peppers. Stir until the onion is slightly translucent.
Step 2
Stir in a tsp of tomato paste and add the caned black beans, including the liquid.
Step 3
Add a cup of water with a chicken stock cube and add your dry spices and bay leaf & fresh coriander
Step 4
Cook for 30 minutes.
Step 5
Once it reaches your desired thickness add your chopped garlic and sugar.
