Instructions
Step 1
Mix all the Cajun seasoning ingredients together in a bowl.
Step 2
Rub half the seasoning into the chicken breasts.
Step 3
Add the chicken to a pan and cook until golden brown.
Step 4
Add the garlic, red and green peppers, and cook until soft.
Step 5
Add the tomato purée and chicken stock, bring to a simmer.
Step 6
Stir in the cream cheese until melted.
Step 7
Add the chicken back into the pan and simmer until cooked through and the sauce has thickened.
Step 8
Add the Parmesan cheese and stir until melted.
Step 9
Taste and season with salt and freshly ground black pepper as needed.
