Add the oil, egg, yolk and salt to the bowl and mix them well with the cheese using a fork. You can use the fork to brake up any large lumps of cheese left.
If the cheese is too salty, only add half of the salt.

Add the flour and use your hands to make a dough. Slightly knead it for a minute in the bowl to pick up any loose bits and develop the gluten. Then leave it in the bowl, cover it with a tea towel and let it rest for 30 minutes. While the dough rests, line a baking sheet with parchment paper.

Cut biscuits of about 4-5cm (about 2 inches). I used a round 5cm cookie cutter, but you can cut them any shape you want, even in squares with a knife.
If you make them much larger or smaller, cooking times and final consistency may vary. Place them on the lined baking sheet, paint them with egg white and sprinkle the sesame seeds on top.

Take the biscuits off the oven and let them cool down for a couple of minutes, serve them warm. Enjoy! If you have left overs (unlikely), store them in the fridge in an air tight container. Heat them for 3 minutes in the air fryer at 180C before serving.
