½ teaspoonground cinnamon

½ teaspoonground turmeric

3.5 poundchicken

2 tablespoonsolive oil

1onion
large, thinly sliced

2 inchfresh ginger root
piece, grated

2 ½ cupschicken stock

2preserved lemons
or limes, or fresh, cut into wedges

½ cuppitted black olives

1 tablespoonhoney

¼ cupcilantro
chopped

Instructions
Step 1
Preheat the oven to 375°F
Step 2
Mix the ground cinnamon and turmeric in a small bowl with a little salt and pepper and rub all over the chicken skin to give an even coating.
Step 3
Heat the oil in a large sauté or shallow frying pan and sauté the chicken on all sides until it turns golden. Transfer the chicken to an ovenproof dish.
Step 4
Add the sliced onion to the pan and sauté for 3 minutes. Stir in the grated ginger and the chicken stock and bring just to a boil. Pour over the chicken, cover with a lid and bake for 30 minutes.
Step 5
Remove the chicken from the oven and add the lemons or 4 limes, olives and honey. Bake, uncovered, for another 45 minutes, until the chicken is tender.
Step 6
Stir in the cilantro and season to taste.
Step 7
Garnish with cilantro 5 sprigs and serve immediately.
