Instructions
Chicken
Step 1
Bring 4 cups of water to boil, add 3 slices of ginger, 1 knotted scallion, 1 tsp kosher salt
Step 2
Add chicken breast, once water starts to boil, set heat to low/ simmer for 5 minutes
Step 3
Turn off heat, leave covered for
15 mins put chicken in ice bath once done
Sauce
Step 4
Mince green onion & ginger
Step 5
Heat 5 tbs corn oil on high til 350-400F(when oil starts to shimmer)
Step 6
Add ginger for 15 secs, add green onions for 20 secs, transfer to bowl, add 1 tsp (table) salt and 1 tbs sesame oil
