Instructions
Step 1
Prepare and slice ginger, scallion, and green chili into thin slices, set aside with garlic.
Step 2
Clean and chop pork ribs into small (roughly 1.5 inches across) pieces, set aside.
Step 3
Heat up cooking oil in a wok or pan, add sliced ginger and garlic until aromatic, then throw in chopped pork ribs to stir. Cook until the surface of pork ribs is gold brown.
Step 4
Add in light soy sauce, dark soy sauce, oyster sauce and chicken powder, mix in and stir until the pork ribs are completely coated with the mixed sauce.
Step 5
Pop open a beer bottle and pour beer in pork ribs to mix. Keep lid on and cook on boiling on medium low heat for 20 minutes. Take the lid off and dry up the broth for a few minutes on medium high heat.
Step 6
Once all the broth evaporates, add in sliced green chili and scallion, transfer to a plate once chilies are cooked. Enjoy warm.
