For the Muffin

240goat flour
blend rolled oats to make this

1 ¼ tspbaking powder

¾ tspbaking soda

1 ¼ tspcinnamon

75mlcoconut oil
melted, or light olive oil

100mlmaple syrup
or honey

1egg
large

150mlalmond milk

1 ¼ tspvanilla extract

Instructions
Step 1
Preheat oven to 180°C (fan 160°C) and line a 12-cup muffin tin with cases
Mix dry ingredients
Step 2
In a large bowl, whisk together oat flour, baking powder, baking soda, and cinnamon
Mix wet ingredients
Step 3
In another bowl, whisk the melted coconut oil, maple syrup/ honey, egg, almond milk, and vanilla extract
Combine
Step 4
Pour the wet ingredients into the dry and stir gently until just combined. Do not over-mix - this keeps the muffins fluffy.
Make the cinnamon swirl
Step 5
In a small bowl, mix the melted coconut oil (or butter), brown sugar, and cinnamon until it forms a paste.
Layer
Step 6
Spoon batter halfway into each muffin case. As a small teaspoon of cinnamon swirl. Top with the remaining batter and swirl gently with a toothpick or skewer.
Bake
Step 7
Bake for 15-18 minutes, or until a toothpick comes out clean. Let muffins cool slightly in the tin, then transfer to a wire rack.
Glaze
Step 8
While muffins are still warm, mix the icing sugar, almond milk, and vanilla until smooth. Drizzle over each muffin generously.
