med, Peeled and 1/2" diced
¼ teaspooncelery seed
⅛ teaspoonblack pepper
0.06 teaspoonchipotle powder
4 cups2% milk
1 tablespoonpotato starch
¼ cupsour cream
¼ cupshredded colby jack cheese
Instructions
Step 1
Put butter and olive oil in pan on med/high heat
Step 2
Cook onion until clear
Step 3
Throw in Garlic until fragrant
Step 4
Add Potatoes and get coated with butter and oil
Step 5
stir in all spices
Step 6
add milk and bring to a slight simmer
Step 7
add potato starch (give or take) to desired thickness
Step 8
simmer for 20-30 minutes until potatoes are tender
Step 9
turn off burner
Step 10
stir in sour cream and cheese until well blended
Step 11
Serve
